  2. Take 2 tbsp of blended flaxseed.
  3. Take 65 ml of soy milk.
  4. Take 60 ml of olive oil.
  5. Take 1 drop of lemon juice.
  6. Prepare 125 gr of blueberries.
  7. You need 210 gr of wholemeal flour.
  8. Take 12 gr of baking powder.
  9. Get 5 gr of baking soda.

  1. Add 3 banana to mixing bowl and mash.
  2. Blend 18gr flaxseed with 90ml of water & add 2 tbsps of mixture to mashed banana.
  3. Add soy milk.
  4. Add olive oil, drop of lemon & mix.
  5. In a separate bowl mix wholemeal flour, baking powder & baking soda (add nutmeg & cinnamon for a little extra flavour).
  6. Add 100gr of blueberries, mix all together gently & add remaining 25gr of blueberries as topping.
  7. Bake for 20 min @ 160c, insert skewer in the centre of the muffin, if batter sticks to the skewer, keep baking until skewer comes out clean.
