  1. You need 2 cup of cake flour.

  4. Rest dough at room temperature for 30 minutes.
  5. Divide dough into four pieces. Roll dough with rolling pin or pasta machine until desired thickness.
  6. Cut dough in desired shape (I made Tagliatelle).
  7. Cook for 5 minutes in simmer salted water or hang to dry to use later. Use within 4 days.

If its too sticky, just roll a bit in flour. Preferably make the pasta by hand - especially if you are making a relatively small quantity like this, which will be difficult for a food processor to mix well. Sift the flour into a clean bowl, then turn it out into a mound on a clean surface and make a well in the middle. Sprinkle a pinch salt into the well, and add the eggs and egg yolks. Dust it well with flour, then loosely roll it up.
